Energy balls
The snack that saved my starving postpartum self!
All measures are approximate
Mix together
2 cups of Smuckers natural (without added sweetener) creamy peanut butter
3/4 cup coconut oil (solid, not liquid)
1 cup honey (give or take for desired sweetness)
2 splashes vanilla
2 pinches mineral salt or preferred salt
1/4 cup chia seeds
After thoroughly mixed, add rolled oats just until mixture can be formed into moist balls. They won't hold their shape super well until they're refrigerated, so don't overdo the oats or it will be dry. Keep refrigerated until ready to eat.
These are not the prettiest protein balls, but they were just what I needed! Every night I would put 2 in a bag on my nightstand so I would have some so grab first thing in the morning as a very hungry nursing mama!
